My personal Hermes favourites include:
Rouge Hermes - roses and myrrh
24 Faubourg - orange blossom and jasmine
Hiris - iris dominated floral
Bel Ami - buttery leather with a sharp citrus opening. Marketed to men but gorgeous on women.
Caleche - sharp aldehydic floral chypre. Tres elegant
Équipage - distinct classic warm fougere for men but wonderful on this woman. It wears very 'clean' and 'soapy' on me, probably due to the lily of the valley in the top notes. A great spring & summer office scent.
Hermèssence Ambre Narguilé - boozy cinnamon wood. great in cold weather and great layered with greener scents in warmer weather.
Eau des Merveilles - EDP only. An original soft woody blend with a delicious 'sea air' accord provided by the ambergris heart note.

Some modern favourites of others (I have yet to try):
Un Jardin en Méditerranée
Hermèssence Rose Ikebana
Un Jardin sur le Nil
Terre d'Hermès - marketed to men but proven to work well on women also. Maybe one to share?!
Elixir des Merveilles - gourmand take on the Eau des Merveilles theme

I would say what Taolady said: take her with you and let her do the job of choosing! If it does not seem possible, all other suggestions would work. Nil for summer, Rouge for winter and Faubourg for the whole year round.

I was surprised by how much I liked the Hermessence-Osmanthe Yunnan EdT.
A very nice combo of tea, flowers, and fruit. The orange and osmanthus make it a delicious and light-hearted scent.
I haven't tried the – Eau des Merveilles, but I find the notes very attractive.
Not familiar w/ what kind of packaging they have today, but a nice Hermes gift box may be well received. After the perfume is gone your wife will have a cool box to remember your sweet and thoughtful gift.
