I really want to add to my wardrobe a "bay rum" fragrance, but I don't really know which one. Any suggestions ?

I've tried just about all of them and my personal fave is ... Burt's Bees Bay Rum.
Long lasting (for a bay rum) and great smelling!

It's too bad they discontinued it. As far as I know, the only place you can still buy the Bay Rum is online. They had a "Tomato Cologne" (haha) for a while, which is also discontinued, but you can buy it for cheap on their website.

It's too bad, because I loved the Bay Rum hand creme they made as well. The whole Bay Rum line was axed. I wonder why?

I think of Clubman Virgin Island Bay Rum as the reference bay rum. It is very nice in a straightforward, spicy way. Royall Bay Rhum is also excellent, perhaps a bit more smooth and subtle. I was disappointed with C. O. Bigelow Bay Rum; it has a pleasant smell but it is not much like bay rum.

I have the Burt's Bees Bay Rum and I vote a thumbs up for that as well. Didn't know they discontinued it. There is a bit of a patchouli undercurrent to it I've detected at times. Maybe that's just the company that I keep, though.
I have owned, in the past, the Dominica Bay Rum. I don't think it is more than $15-20 ever, and it is a pretty good straightforward Bay Rum. When I bought it I had gotten it from the Vermont Country Store, which maintains a web-store.

If anyone is close to the Kansas City metro area, Bruce Smith Drug in Prairie Village, KS still carries Burt's Bees Bay Rum . And, I agree that this is a wonderful bay rum cologne.

Burt's Bees is the best, although Trumper's is very nice (albeit expensive).
